Imported dried mango is mostly sugar with a fruit flavour stamp.

Walk any UAE supermarket aisle: most 'dried mango' is sliced fruit dipped in syrup, dusted with refined sugar, and slow-air-dried at 60°C — leaving 25% moisture, half the vitamins gone, and a sugar load closer to candy than fruit. The label says 'mango.' The taste says corn syrup. And on a 38°C school day, the bag goes sticky in the lunchbox by mid-morning.

Cold-Seal at minus 50°C — what makes our mango different.

Each tray of fresh Alphonso or Keitt mango is flash-frozen to -50°C, then dropped to 0.5 millibar vacuum so the ice sublimates straight to vapour without ever passing through liquid water. The fruit loses 95–98% of its mass to water removal. Final moisture stays below 3%. The vitamin C and beta-carotene stay locked in the cellular structure.

The jar seals at room temperature with a moisture-impermeable PET liner. With essentially no free water inside, there is nothing for heat to melt and nothing for moisture to condense onto. Open the jar after a 6-hour summer errand and the slice still snaps when you bite it.

Is freeze-dried mango healthy?
Yes — and arguably more so than fresh mango for the keep-and-snack use case. Vacuum sublimation at -50°C preserves vitamin C and beta-carotene that air-drying at 60°C destroys. Our mango has zero added sugar, zero preservatives, zero sulphites. The only ingredient is mango. The trade-off vs fresh fruit: you lose the water (which means a more concentrated nutrient density per gram) and you lose perishability (12-18 month shelf life unopened).
Is freeze-dried mango good for you?
Same answer as 'healthy' — yes, for what it is. It is fruit. Compared to imported dried mango with added sugar (often the equivalent of candy), our freeze-dried mango is just the fruit at <3% moisture. As with any fruit, it contains natural fructose. Eat it as you would fresh fruit: a portion, not a bag.
What is the difference between freeze-dried and dehydrated mango?
Process. Freeze-drying happens at -50°C under 0.5 mbar vacuum — the water in the fruit sublimates from solid ice straight to vapour without ever becoming liquid. The cell walls stay intact. The result: 1-3% final moisture, full nutrient retention, snap texture. Dehydration heats the fruit to 50-70°C in a convection oven and drives off water as liquid then vapour. Some cell walls collapse. The result: 15-25% final moisture, partial nutrient loss, chewy texture. Both are 'dried mango' but they are not the same product.
How long does freeze-dried mango last?
12–18 months unopened at room temperature, no refrigeration needed. After opening, reseal the jar and finish within 30 days for the best texture. UAE pantry conditions (22–28°C) are fine. Avoid direct sunlight and storage above 50°C even when sealed.
