How we operate today — and where we are on the path to third-party halal certification.

Al Nukha Roastery operates from a single facility at Shop 8, Rawdha 2, Ajman, United Arab Emirates, under Ajman Department of Economic Development trade licence #127710 (issued 13 November 2024). Every product in our catalogue is manufactured in this one facility under the same operational halal practice — we have no contract manufacturing, no co-packing arrangements, and no shared production lines with other brands.
What our operational halal practice means in concrete terms:
- No animal-derived processing aids are used in any product line. Freeze-drying, the core process for our fruit, vegetable, and ice cream ranges, requires no fats, no gelatin, and no enzymes.
- No cross-contact with non-halal ingredients at any stage of intake, storage, processing, packaging, or distribution. Our facility has never handled non-halal animal products.
- Single-facility production means there is no second site whose practice we have to vouch for separately.
- Ingredient-by-ingredient transparency on every product detail page — see the ingredient list before you buy.
2. Ingredient sourcing
We source raw fruit, vegetables, dairy, and confectionery base ingredients from suppliers who serve the wider UAE food-grade supply chain. Every ingredient we use is one that is already standard in halal-compliant UAE retail.
- Fruits and vegetables: regional and imported fresh produce — mango, strawberry, kiwi, banana, dragon fruit, peach, fig, lemon, mulberry, passion fruit, blood orange, pineapple, coconut, mixed fruits, mixed vegetables, okra, broccoli.
- Ice cream base: dairy-based ice creams in flavors including saffron-pistachio, Nutella, mango, vanilla, and mixed.
- Candy and confectionery: sugar-based crisp confectionery; rainbow candy bites; banana candy; heart-shaped candy. None of our candy lines use animal-derived gelatin or marshmallow at this time.
- No alcohol-based extracts, no pork-derived ingredients, no animal rennets in any product.

3. Manufacturing isolation
Our facility procedures are designed to keep halal-compliant production isolated from any potential cross-contact, even though we do not co-manufacture other brands today:
- Intake inspection: raw ingredients are inspected against the supplier specification before they enter the production area.
- Dedicated equipment: freeze-drying chambers, vacuum-frying lines, and packaging equipment are not shared with any external production.
- Cleaning protocol: equipment is cleaned between batches with food-grade cleaning agents only — no animal-fat-based cleaners, no surfactants of animal origin.
- Storage segregation: finished goods are warehoused on-site at the Ajman facility, in dedicated dry-storage racks.
- Packaging: Cold-Seal jars, multi-layer pouches, and resealable bags are sourced from food-grade packaging suppliers and stored separately from raw ingredients.
4. Certification in pursuit
We are pursuing third-party halal certification with TÜV SÜD, an internationally recognised certification body operating in the UAE. Target: 2026.
Until certification is in hand, we describe what we do as halal-compliant operational practice, not "halal-certified." This is deliberate:
We will not describe ourselves as "halal-certified" before that certificate exists.
5. What "certified" will mean
When the TÜV SÜD certificate arrives, this page and the rest of our public surfaces will update simultaneously, and only then. The changes you will see:
- This page renames back to Halal Certification with the certificate document linked, certificate number visible, scope and expiry stated.
- Product detail pages add the certified-halal language in addition to the operational language they carry today.
- Schema.org Organization data on every page adds a
hasCredentialentry pointing to the certificate. - The site-wide announcement bar updates to reference the certified status.
